i've observed the same phenomenon, Phil.
I have solved the problem by setting up my gear in the backyard and using it the day before I travel. That way if I pack everything that is set up I have what I must have by definition.
a mock setup in the garage can be a functional substitute.

In preparing to go observing (imaging actually) at Fremont Peak tomorrow I started rounding up all of my gear to load into the car. OTA, mount, cold weather clothing, CCD camera, laptop, table, chair, thermos bottle, Radio Shack thermometer/hygrometer, dew guards, heaters, and on and on. And I noticed that all of this stuff seems to have moved out from it's normally centralized location. In fact, I it seems to me that the longer I go between observing runs (because of lousy weather, for instance) the more spread out my gear tends to get. Sort of like a sand castle at the beach during a rain storm.
